I love figs, fresh and dry equally. I have a sweet tooth and figs are my healthy option to satisfy the sweet run I have at times. Figs are very versatile and can be used in milk shakes, ice creams, kheer, salads, energy bars and on its own.

Sugar Free Anjeer Ki Mithai have almost equal amount of nuts, thus making these rolls rich in protein. These rolls are healthy and power packed snacks to binge on. These high on fibre rolls are quite easy and quick to prepare. They have a good shelf life and can stay good without refrigeration for minimum of ten days.

Ingredients for Nuts and Fig Roll

250 grams figs (approx. 30 pieces)
1/2 cup chopped raisins (kissmis) (optional)
3 tablespoon poppy seeds (khuskhus)
1/3 cup chopped almonds (50 grams)
1/3 cup chopped cashew(50 grams)
1/3 cup chopped pista(50 grams)
1/3 cup chopped walnuts(50 grams)
1 tablespoon ghee for greasing
1/2 teaspoon cardamom powder
2 tablespoon sliced pistachio (pista) for garnishing

Directions for Sugar Free Anjeer Ki Mithai

  • Soak the fig in warm water for 20 minutes.
  • Dry roast the khuskhus (poppy seeds) and set aside
  • Dry roast almond, cashew, pista and walnuts. Set aside.
  • Drain and chop the figs.
  • Add raisins, chopped figs (anjeer) to a food processer and grind coarsely.
  • Add ghee to a pan; add anjeer mix and stir for 2 to 3 minutes on low flame until there is no moisture left, but the mixture is still soft.
  • Add the nuts and mix for 2 to 3 minutes to get an even mixture.
  • Add cardamom powder, half of khuskhus and stir to mix.
  • Switch off the heat.
  • Transfer the batter to a plate and allow it to cool a little, so that the batter is a little firm and can be easily handled.
  • Divide the mixture into two parts.
  • Place one part on a piece of butter paper and roll it into a thick log.
  • Now spread half of the khuskhus and pista on the butter paper and roll the log to coat it evenly.
  • Transfer the roll on to an aluminum foil, cover the fig log and seal the edges.
  • Similarly make the second log.  
  • Keep refrigerated for 3 to 4 hours.
  • Cut with a sharp knife along with the foil into half inch thick disk. Now remove the foil.
  • Store the slices in a dry container.
