Crisp Spinach Raita with soft Pakori

Crisp Spinach Raita with soft pakori is a simple side dish made of fresh dahi (yogurt).  Raita can be made adding any fruit, fresh vegetables, boondi and gram flour fritters. Indians enjoy their dahi all-round the year but it is a necessity during summer. Raita comes in handy when you get bored of plain dahi (yogurt) as it is versatile dish and can be made easily in many ways.

Ingredients for Crisp Spinach Raita

2 cups yogurt
1 teaspoon sugar
1/2 teaspoon roasted cumin powder
1/4 teaspoon chilli flakes / powder
Salt to taste

For the pakori
3 tablespoon besan (gram flour)
A pinch of red chilli powder
1 teaspoon ajwain (carrom)
1 tablespoon chopped coriander leaves
Salt to taste

For the crackling spinach
4 tablespoon spinach thinly chopped

Directions for Crisp Spinach Raita

For the Pakori

  • Take 2 cups of water in a bowl, add 1/2 teaspoon salt and set aside for soaking the pakories.
  • Mix all the ingredients for the pakori in a bowl.
  • Add water to form a thick batter. Whiskto make it smooth and fluffy.
  • Heat oil in a pan; drop very small portion in the hot oil and fry the pakori on medium heat.
  • Dip in the salted water to soak.
  • Let them soak for 10 to 15 minutes.

For the crackling spinach

  • In the hot oil fry the spinach in medium hot oil till crisp. Drain the excess oil by spreading on paper napkin and set aside.

For the Raita

  • Whisk the yogurt in a bowl.
  • Add salt, sugar, half of chilli and cumin to the yogurt and mix well.
  • Gently squeeze the pakori and add to the yogurt, mix.
  • Transfer to a serving bowl and sprinkle rest of chilli flakes, cumin.
  • Place the crisp spinach on top and serve immediately.
