Kaddu ki Barfi – Recipe for Kaddu ka Meetha (Pumpkin Fudge)

Kaddu ki Barfi or Halwa (Pumpkin Fudge) recipe is a simple dessert made with this lovely vegetable known as Kaddu/ Pumpkin/ Kashiphal, Kumda or Kumra, Sitaphal to name a few. Kaddu ka meetha (Pumpkin ka halwa) is easy to make and requires few ingredients only. This sweet dish comes together in a short period and taste delicious. For this burfi you don’t need to make sugar syrup (chashni). 

Pumpkins are squashes that are a part of the gourd family, and they have become a popular culinary staple all over the world. Its is widely used in sambar, punchamel ki sabzi. Kaddu ki sabzi pairs well with stuffed puries and belma kachories.

One important tip to make a great burfi is to sauté the grated kaddu in ghee. This enhances the flavor and texture of the burfi. This elegant mithai has a fruity taste and is light on the stomach unlike other burfies which are high on fat or ghee. Pumpkins are available all round the year in India, so you don’t have to wait for the season or the availability. This is a good festival sweet. Kaddu ki burfi can be used during the falahari fasting days also.

Kaddu ki Barfi, Kaddu ka Meetha, Pumpkin Halwa, Pumpkin Fudge

Ingredients for Kaddu ki barfi

500 grams pumpkin grated (kaddu)
1+ 1 tablespoon ghee
1 cup milk
1/2 cup sugar
200 grams khova/mava grated
A pinch of saffron
1 teaspoon cardamom powder
2 tablespoon mixed nuts of your choice chopped
Food color (optional)

Directions for Kaddu ka meetha

  • Heat 1 tablespoon ghee in a pan, add the grated pumpkin and sauté for 8 to 10 minutes until it is dry.
  • Add milk and cook till it is absorbed .
  • Now add the sugar and stir till it thickens.
  • Add saffron, mava and sauté till well incorporated.
  • Add 1 tablespoon ghee, half the nuts and sauté till it leaves the sides.
  • Switch off the heat, add cardamom and stir.
  • Transfer to a greased tray. Level the batter, sprinkle rest of the nuts and set aside for 2 hours.
  • Cut in desired size and serve.
