Rajgire ki Pakori ka Raita – Falahari recipe

Just 15 minutes required to prepare this yummy Rajgire Ki Pakori Ka Raita (Falahari recipe)! This raita is very quick and easy to make and truly delicious and refreshing. These crispy pakoras dunked in flavored yogurt are quite filling and a great side dish for the fasting days whether it is Navratri or any other day.

Amaranth Flour / Rajgira ka atta is one of the ingredients that is used during fasting days specially when only Falahari food is consumed. Amaranth flour is one of the most protein-rich of any plant-based food.  While many of the most commonly consumed grains contain gluten, amaranth is naturally gluten-free and can be enjoyed by those on a gluten-free diet.

Rajgire ki Pakori, Rajgira Pakodi

Ingredients for Rajgire Ki Pakori Ka Raita

2 cups dahi
1 green chilli chopped fine
1 inch ginger chopped fine
Red chilli /pepper powder to taste
1 tablespoon chopped coriander
Salt to taste
Jeera powder (optional)

For the pakori
1/2 cup rajgira atta
1 medium boiled potato
2 tablespoon chopped coriander
1 chopped green chilli
Red chilli/ pepper powder to taste
Salt to taste
Oil for frying

Directions for Rajgire Ki Pakori Ka Raita

  • In a bowl add yogurt along with all the ingredients and whisk well.
  • Mash the potato well, add rest of  the ingredients.
  • Make a very thick batter by adding water gradually.
  • Heat oil and drop small portions in the oil and fry till golden on medium heat.
  • Drain the excess oil on an absorbent paper.
  • Add the pakori to the prepared yogurt.
  • Adjust the seasoning and serve.
