Sama Ke Chawal Ki Kheer (Barnyard millet & milk pudding)

Sama Ke Chawal Ki Kheer is a delicious falahari dessert usually prepared during fasting days of Navratri, Janamastmi and many other days when the regular cereals like rice, wheat are not consumed. Also known as Vrat ke chawal ki kheer, Samvat Rice Kheer and samo ki kheer; this is a great food for people on diet or who prefer a Gluten-free diet. You can make this kheer on normal days also. This kheer recipe is one of the easiest dessert recipes that can be prepared within 30 minutes. However, one need not be on a fast to enjoy this!

Vrat ke chawal also known as Samo, Samwa, Samvat Rice, Moraiyo, Mordhan, Swang ke chawal, Samak rice, Barnyard millet to name a few. This millet is tiny, white round grain bigger than semolina and smaller than sago. It is a great replacement for rice. Samo is low in calories and high in dietary fibre. It is a good source of iron, digestible protein and Yes it is Gluten-free!

It tastes similar to rice kheer (payasam) and preparation is also similar. For this kheer, I have washed the seeds of sama rice and kept them on a strainer for ten minutes for it to dry. Then I sauteed the millets in little ghee to get the aroma of the millet. You can also make the kheer by just soaking the millets in water for 20 to 30 minutes.

This kheer is light on the stomach as it is easily digested. It can be served hot or chilled according to one’s preference. The addition of nuts is optional. Ingredients for Sama Ke Chawal Ki Kheer

1 litre milk
1 teaspoon ghee (clarified butter)
1/3 cup samo/moriya/barnyard millet
1/2 cup sugar (a little less if you like less sweet)
1/4 teaspoon cardamom powder
6 almonds sliced
6 pistachios (pista) – optional
2 tablespoon raisins (kismis) – optional
A few strands of saffron (Kesar)- optional

Directions for Samo Ki Kheer

  • Clean the sama rice. You can wash it on a strainer and let all the water drain for 15 minutes.
  • Keep the milk to boil in a saucepan.
  • Once it starts to boil, then lower the heat and let it continue to boil.
  • Heat the ghee in a pan; add the sama rice and stir for 3 minutes. Switch off the heat.
  • Add sama rice to the boiling milk gradually or add the milk to the sama rice pan and continue to boil on low heat till the milk is 1/3 reduced.
  • Add sugar and continue to boil till the sama rice is cooked and the kheer comes to desired consistency.
  • Switch off the heat; add cardamom powder, chopped almonds (badam) and chopped pistachios (pista).
  • Heat 2 teaspoons of milk. Switch off the heat and add the saffron to get its natural colour. Pour it over the kheer.
  • Serve hot or cold.
