This creamy vegan Sun-Dried Tomato Dressing comes together in less than 5 minutes. With a perfect balance between creamy and tangy, this dressing is packed with flavours. It adds an instant burst to almost any dish! Plus, it’s dairy-free and nut-free too.

Sun dried tomatoes tend to have a chewy texture and a concentrated flavour. This is such an easy and delicious way to distribute the flavour throughout your favourite salads, without any overpowering bites!

It’s super simple! With minimal prep work and only a handful of ingredients are required to make this Sun-Dried Tomato Dressing. Let your blender do all the hard work! Throw all the ingredients into a food processor or blender and whirl away!

It is versatile! Not only is this a delicious salad dressing – but works great in pastas, sandwiches, wraps and noodles.

Ingredients for Sun Dried Tomato Dressing

1 cup sun-dried tomatoes, click here for recipe
6 pods roasted garlic
2 tablespoon chopped shallots/onions
2 tablespoon fresh basil
1 tablespoon balsamic/ apple cider vinegar/ lemon juice
1 tablespoon olive oil
1/2 teaspoon pepper powder
1 teaspoon dried oregano
Salt to taste

Directions for Sun Dried Tomato Dressing  

  • Combine all of the ingredients in the blender and blend until everything is finely minced and well combined. Add a splash or two of water to loosen it up until it reaches your desired consistency and is well emulsified.
  • This dressing will thicken a bit when chilled, so I recommend chilling for at least 4 hours before serving. The flavour actually gets better when chilled overnight!  
  • Refrigerate in an air-tight container for up to a week.

Notes – Use oil-packed sun-dried tomatoes for this dressing. If all you have are the dried ones that come in the bag, those will still work, but you’ll have to add a bit more olive oil and blend for a bit longer to get a smooth consistency.
