Easy Tomato Olive Focaccia Bread

Easy Tomato Olive Focaccia Bread is an Italian yeast bread. Although this homemade recipe for Focaccia Bread is simple, it creates a rich, flavorful and soft bread with an ultra-crispy exterior. The best part of the focaccia bread is its texture, it truly resembles perfection in every bite.

Focaccia is made with a dough that is similar to pizza dough. Herbs and garlic are popular toppings, but you can explore your creativity and add other toppings like olives, tomatoes, parmesan cheese, pine nuts, pesto, caramelized onions, and more. Focaccia can be part of a meal, an appetizer, a soup, a stew, or even for making sandwiches.

This Tomato Olive Focaccia Bread is well flavoured. I absolutely love garlic and hence I have used minced garlic to flavour the dough, but this is completely optional. If you like a strong garlicky flavour then go for it, otherwise, skip adding extra garlic in the dough. This is a super simple recipe, just requires some patience. The focaccia is best served the day it’s made.

Ingredients for Tomato Olive Focaccia Bread

1 and 1/2 cups warm water
2 teaspoon yeast
2 teaspoon honey
4 cups plain flour + 2 tablespoons for dusting
1 and 1/2 teaspoon salt
1 tablespoon minced garlic
1 tablespoon garlic pods (optional)
2+2 tablespoon olive oil
1 medium tomato sliced
1 tablespoon spring onions greens chopped
1 tablespoon black olives

Directions for Tomato Olive Focaccia Bread

  • In a mixing bowl add warm water, honey, yeast and stir to mix well. Cover and rest for 10 minutes or until frothy.
  • Stir in flour, minced garlic, 2 tablespoon olive oil and salt.
  • Gently mix and combine all the ingredients in the bowl.
  • Then transfer the dough on to a flat surface and knead the dough until it is smooth and elastic about 10 minutes.
  • Form the dough into a round ball. Coat the entire ball with oil. Cover it and let it rise in a warm place for an hour or until double in size.
  • Remove dough from bowl and press it into a lightly oiled 9- by 13-inch baking sheet pan until it touches the edges. Cover with a damp cloth and rest until the dough becomes puffy about 40 to 60 minutes.
  • Preheat oven to 450 degrees Fahrenheit or 200 degree centigrade.
  • Drizzle a tablespoons olive oil on the dough. Using your fingers, poke holes all over the dough. Top the dough with tomato slices, olives, spring onion greens and garlic if desired. Drizzle with remaining 1 tablespoon of olive oil.
  • Bake until the focaccia is golden brown, about 20 to minutes.
  • Remove from oven and allow to cool on a rack. Cut into pieces and serve with soup.
