This is a summer special Indian sweet dish that is the best gift one can give to its family during hot scorching heat of summer. To have best of summer this dessert has fresh mango pulp and litchi that are available during summer.

Stuffed Lychee In Mango Rabri (Stuffed Lychee In Thickened milk With Mango) is very easy to make. I have thickened the milk which needs no efforts. Only effort required is for taking out the seeds from the lychee while keeping the shape intact for stuffing. This sweet dish can also be enjoyed during fasting.

Few ingredients are required to make this flavorful fruity dish. You can also call it as Litchi Sandesh or Sondesh float. Use good quality mangoes for making the puree. I have used Alphonso mangoes, but you can use any other variety which is easily available. You can also use tinned mango pulp and canned lychee if desired. The stuffing for the Litchi is made with Chenna or paneer (cottage cheese) which is mildly sweetened and flavoured with rose water.
