Spaghetti and Cottage Balls in Sun-dried Tomato Sauce

Spaghetti and cottage Balls in Sun-dried Tomato Sauce has all the fresh flavors. This truly satisfying dish has a good combination of herbs, vegetables and cottage cheese and is so delicious, and easy.

This dish is full of good-for-you veggies and is incredibly healthy. Instead of regular pasta I have used whole wheat spaghetti and Zoodles (zucchini noodles). Meat balls are replaced with protein and calcium rich cottage cheese balls. A rich sun-dried tomato sauce also has lots of vegetables.

The cottage cheese balls are firm yet tender on the inside. The homemade tomato sauce is full of fresh flavors. What more could you ask for? I promise you that you will LOVE them. Ingredients for Spaghetti and cottage Balls in Sun-dried Tomato Sauce

1 packet whole wheat spaghetti
1 tablespoon garlic chopped
2 cups zucchini noodles
1 tablespoon basil torn
1 teaspoon chilli flakes
2 tablespoon oil
Salt to taste

For cottage cheese balls
2 cups cottage cheese crumbled
3 slices bread broken
2 tablespoon parsley/ celery chopped fine
1/4 cup onion chopped fine
1/4 cup capsicum chopped fine
1 tablespoon garlic chopped fine
1 teaspoon pepper
3 tablespoon corn flour for binding
1/4 teaspoon baking powder
2 tablespoon yogurt
Oil for frying
Salt to taste

For sun dried tomato sauce
1 cup sundried tomatoes
1 cup tomato chopped
1 cup red pepper chopped
1/2 cup onion chopped
1 tablespoon garlic
2 tablespoon basil
1 tablespoon parsley
1 tablespoon raisins
1/2 teaspoon paprika
Salt to taste

Sauce

  • Combine the sun-dried tomatoes, with  tomatoes, pepper, onion, garlic, herbs and spices in a food processor.
  • Puree until the mixture is smooth.
  • Add water 1 tablespoon at a time until the sauce reaches the desired consistency.

Balls

  • Combine all the ingredients and mix well. Make balls of desired size.
  • Heat oil and fry the balls in batches on medium heat. Drain when golden.
  • Set aside.

How to Proceed

  • Cook the spaghetti according to the instructions on the package.
  • Heat oil in a large pan; add garlic and onions and saute for 2 minutes.
  • Add the boiled spaghetti, chilli flakes, salt and toss.
  • Pour in half the sauce and toss till well mixed and hot.
  • Now add the zucchini noodles, basil and toss to mix.
  • Transfer to a serving plate add the balls and pour in rest of the sauce.
  • Serve with grated cheese on top.
