Kway Teow (Malaysian Flat Noodles)

Kway Teow is one of the most popular street foods in Malaysia, also known as Char Kway Teow (Malaysian Flat Noodles) is smoky fried noodles cooked in just 5 minutes. It’s very important to only cook one serving of this dish at a time so the noodles get the smoky flavour and brown colour. It has to be cooked in high heat.

Today, Kway Teow is one of the most popular dishes in Malaysia and Singapore. They are also spelled as ‘Char kuey teow’  which means stir-fried flat rice noodles. Soak the dried rice noodles in cool or lukewarm water for 30 minutes, or until they’re limp but still firm to the touch; later cooking in the wok will soften them more. Drain the noodles thoroughly in a colander and set aside while preparing the other ingredients.

Ingredients for Kway Teow
Chilli Paste
2 dried red chills soaked in water
2 fresh red chillies seeded
3 small shallots sliced
1 teaspoon oil
A pinch of salt

Sauce
2 tablespoons soy sauce
1.5 tablespoons dark soy sauce
1 teaspoon oyster sauce
1 teaspoon sugar
1/4 teaspoon white pepper powder

Noddles
250 grams flat rice noodles
2 tablespoon oil
2 teaspoon chopped garlic 
1/2 cup sliced baby corn 
1/2 cup carrot cut into long strips
1/2 cup sliced mushroom
100 grams bean sprouts (optional)
1 bunch of Bok choy
1/4 cup of tofu cut into cubes and deep fried
1/2 cup spring onions chopped into 1.5 inch lengths
1 tablespoon chopped spring onion greens to garnish
Salt to taste

Directions for Kway Teow

  • Grind all the ingredients together for the chilli paste to a fine paste.
  • Mix all the ingredients for the sauce and keep.
  • Boil the noodles according to the instructions.
  • Heat oil in a large wok. Add the garlic, fry till its aromatic.
  • Add all the vegetables and fried tofu.
  • Add in chilli paste and cook till the raw smell goes off.
  • Now add in the noodles and stir well.
  • Stir in the sauce gently and let it cook for 2 minutes.
  • Add spring onions, salt and pepper.
  • Check the seasoning.
  • Serve immediately garnished with spring onion greens.
