Rajgira Halwa (Amaranth Pudding)

Rajgira Halwa (Amaranth Pudding) is a tasty sweet eaten usually during fasting days of Ekadashi, Navratri and other days when only falahari food is eaten. This halwa is very healthy as it is packed with nutrients.  

Amaranth or Rajgira means “immortal” or “everlasting” in Greek because it contains more than three times the average amount of calcium and is also high in iron, magnesium, phosphorus, potassium and it is the only grain which contains Vitamin C. Rajgira Halwa

Yield: 3 to 4 serving

Ingredients for Rajgira Halwa (Amaranth Pudding)

½ cup Rajgire ka atta (Amaranth flour)
1/3 cup ghee
½ cup sugar
1½ to 2 cups warm milk
2 tablespoon almonds crushed
1 tablespoon almond flakes
½ teaspoon cardamom powder

Directions for Rajgira Halwa (Amaranth Pudding)

  • Heat ghee in a pan; add atta and saute on low heat till the atta turns brown and aromatic.
  • Sprinkle 2 tablespoon water and saute till the moisture evaporates. Repeat 2 more times.
  • Now pour in the warm milk and stir to remove all the lumps.
  • Add sugar, almonds and stir till the sugar melts and the halwa is thick.
  • Switch off the heat and add cardamom powder.
  • Serve immediately garnished with almond flakes.
