Stir Fried Jade Vegetables with Tofu

How to make a perfect Stir Fry?

    • Prep vegetables Be sure to cut the vegetables in uniform sizes so that they cook evenly.
    • Saute veggies in a large wok on high heat.
    • Saute the garlic and ginger for a few seconds only.
    • Sometimes, ingredients in a stir fry might require more cooking – like broccoli florets. Add the vegetables according to the cooking time required by them, so that the tender vegetables do not get over cooked and lose their crunchiness.
    • For better results mix together all of the ingredients you will be using for the sauce.
    • After adding the sauce to the vegetables, stir fry for 2 to 3 minutes until sauce thickens and coats the vegetables.

Variations for vegetables used

  • Mushrooms, Lotus Roots can be used instead of Tofu, if it is difficult to find.
  • Snow Peas and Asparagus are a good addition.
  • Coriander, basil or celery can be used to garnish.

Ingredients for Stir fried Jade Vegetables

1 + 1 tablespoon sesame/ peanut oil
200 grams tofu cut into 1” pieces
1 tablespoon garlic chopped fine

2 dry red chilli broken (optional)
1 tablespoon ginger chopped fine
1 cup spring onion chopped and greens separate

200 grams broccoli chopped
100 grams beans diagonally cut
1 capsicum diagonally cut
1 cup zucchini diagonally cut

For the sauce
1 tablespoon corn starch
1 tablespoon soy sauce
freshly cracked pepper

1 teaspoon vegetarian oyster sauce (optional)
Salt to taste
1 teaspoon brown sugar (optional)
1 tablespoon lemon juice /vinegar (rice wine or red wine)

Garnish
1 tablespoon roasted sesame

2 tablespoon spring onion greens

Direction for Stir Fried Jade Vegetables

  • Mix corn starch with 1/4 cup water and add rest of the ingredients for the sauce. Set aside.
  • Heat 2 tablespoon of oil in a pan; shallow fry the tofu lightly and keep aside.
  • In the same pan; add dry chills, garlic, ginger, spring onions, and saute for a minute.
  • Now add broccoli, beans, pepper and saute for 3 minutes.
  • Add the zucchini and toss for a minute.
  • Add the tofu and toss for a minute.
  • Add the sauce prepared earlier.
  • Add in the lemon juice and toss.
  • Garnish with rest of the spring onion greens, sesame and freshly cracked pepper.
  • Serve with rice or noodles.
