Hoisin Vegetables With Pan Fried Noddles

Hoisin Vegetables With Pan Fried Noddles is a complete meal. This dish has crispy pan fried noddles with sweet and spicy hoisin sauce making it a perfect meal for any time of the day. It is very easy and quick to make. The combination of vegetables can be changed according  to your liking. This nutritious dish is a must try.

If off the shelf Hoisin sauce is not available, then you can also prepare the same at home by combining following ingredients in a small mixing bowl (mix with a whisk utill well blended). The ingredients for Hoisin Sauce are –  4 tablespoons soy sauce, 2 tablespoons peanut butter, 1 tablespoon honey, 2 teaspoons rice vinegar, 1 garlic clove, finely minced, 2 teaspoons sesame seed oil, 1 teaspoon hot sauce (more or less to taste), 1/8 teaspoon black pepper.

Hoisin sauce is sweet and savory. it can be used as a sauce to dip or drizzle in many chinese dishes as well as in starters like spring rolls.

INGREDIENTS FOR HOISIN VEGETABLES WITH PAN FRIED NODDLES

Hoisin Vegetables With Pan Fried Noddles
1. Ingredients

For the noddles
200 grams pack of noddles
1 + 2 teaspoon oil
1 teaspoon salt

For the vegetables
1 tablespoon garlic chopped fine
1 carrot cut diagonally
5 baby corns cut diagonally
¼ cup zucchini cut diagonally
¼ cup cabbage cubed
¼ cup mushrooms quartered
1 to 2 heads of bok choy
3 tablespoon hoisin sauce
1 teaspoon red chilli sauce
A pinch of white pepper
Salt to taste
2 teaspoon oil

DIRECTIONS FOR HOISIN VEGETABLES WITH PAN FRIED NODDLES

For the noddles

  • Bring a pot of water to a boil, add salt and cook the noodles .Drain, and rinse under cold water.
  • Toss with a teaspoon of oil and set aside.
  • Heat a broad pan over high heat and add 1 teaspoon of oil.
  • Spread  the noddles cross the surface of the wok in a thin, even layer. Cook over medium heat until the noodles are crisp, about 5 minutes.
  • Flip the noodles over and add another tablespoon of oil around the noddles to let the other side crisp up.

For the vegetables

  • Heat oil in a pan, add the garlic and saute for a minute
  • Add the  carrot and sauté for a minute.
  • Now add the baby corn, cabbage and mushroom and saute for 2 minutes.
  • Add the zucchini and saute.
  • Add the hoisin sauce, red chilli sauce, pepper and salt.
  • Toss till the vegetables are well coated.
  • Add bok choy.
  • Stir in water and cook for 2 minutes.
  • Pour over the pan fried noddles.
  • Serve hot.

Note: Cut the vegetables uniformly so that they cook at one time. Keep all the vegetables and other ingredients ready before putting the heat on.
