Greek Salad

Greek Salad is a very healthy and delicious salad, loaded with lots of fresh vegetables. This classic salad is crunchy and brimming with  flavors. This salad is a perfect side dish for any meal.

I love this salad as it calls for ingredients that you likely to keep in hand. The key ingredients are the tomatoes, cucumber, onions, feta cheese (or soft paneer pieces in absence of feta cheese) and olives. Variations can be done by the use of other vegetables like bell peppers, lettuce and avocado. Olive oil gives a nice glaze to the salad. The crunchy lettuce, soft feta cheese and a tangy dressing takes this salad a notch higher.

Ingredients for Greek Salad

Salad 
1/2 cup deseeded cubed/sliced English cucumber (kheera)
1/2 cup cubed/sliced onion
1/2 cup cherry tomato halved or plum tomato cubed/sliced
1 cup red, yellow and green peppers cubed/sliced
1/2 cup diced/sliced red cabbage (optional)
1 cup lettuce torn into bite size and soaked in ice water
1 tablespoon black olives pitted and halved
1/2 cup feta cheese crumbled or (soft paneer pieces marinated in olive oil, salt, oregano for 2 hours )

Dressing
2 tablespoon Extra Virgin Olive oil
1/2 teaspoon dried Oregano
Salt and pepper to taste
1 tablespoon Red wine vinegar
1 tablespoon lemon juice
2 cloves garlic minced
2 teaspoon parsley chopped finely

Directions for Salad

  • Whisk together all the ingredients for the dressing until well blended. This can be made in advance and kept in room temperature.
  • In a large salad bowl, combine all the chopped vegetables and feta cheese.
  • Pour the dressing and toss lightly.
  • Serve immediately.
