Raita

Raita is a condiment made with dahi (curd) together with raw or cooked vegetables, more seldom fruit, or in the case of boondi raita, with fried droplets of batter made from besan (gram flour). The curd provides you with necessary protein and calcium, along with the nutritional benefits of the veggies. There are different forms of raita and currently we have added Boondi Raita, Pudina Raita, Kachumber Raita and Papaya Raita to this section.

Boondi Raita

Boondi Raita

Boondi Raita (Yogurt Side Dish) is simplest and the easiest side dish to make. It can be made in a jiffy if you have just two ingredients handy-yogurt and boondi. This delicious accompaniment is best served with any kind of pulao, spicy curries and dry subzis.

Ingredients for Boondi Raita

3 cups yogurt
½ cup boondi
½ green chilli chopped
1 teaspoon coriander chopped
1teaspoon sugar
½ teaspoon roasted cumin powder
A pinch of red chilli powder/ pepper
Salt to taste

Directions for Boondi Raita

  • Whisk the yogurt in a bowl.
  • Add rest of the ingredients except boondi and mix well.
  • Add the boondi and stir to mix.
  • Sprinkle cumin and red chilli powder.
  • Keep in the refrigerator till you serve.
  • Serve for lunch or dinner.

Pudina raita (mint yogurt)

Pudina Raita

Pudina Raita (Mint Yogurt) is a very refreshing yogurt side dish.

Ingredients for Pudina Raita (Mint Yogurt)

2 cups yogurt
¼ teaspoon dry mint powder
½ teaspoon mint chopped
½ teaspoon mint crushed
½ teaspoon sugar
½ teaspoon roasted cumin powder
A pinch of pepper
Salt to taste

Directions for PUDINA RAITA (MINT YOGURT)

  • Whisk the yogurt in a bowl.
  • Crush the mint in a mortar pestle.
  • Add all the ingredients to the yogurt and mix well.
  • Keep in the refrigerator till you serve.
  • Serve for lunch or dinner.

Kachumber Raita

Raita, Kachumber Raita

Kachumber Raita is a super easy and quick side dish, anyone can make. With this simple dish there is no scoop for going wrong. This Raita can be accompanied with any Indian bread and rice dish. Try this healthy and refreshing raita with my Mushroom Biryani or Methi Sweet Corn Pulao.

Ingredients for Kachumber Raita

2 cups Yogurt
1 Onion chopped fine
1 Tomato chopped fine
2 tablespoon Cucumber chopped fine
1 tablespoon Coriander chopped fine
1 Green chilli chopped fine.
½ teaspoon roasted Cumin powder
Salt to taste
Black Pepper freshly cracked

Directions for Kachumber Raita

  • In a bowl whip the yogurt smooth.
  • Add all the ingredients to it and mix.
  • Adjust salt and pepper to taste.
  • Garnish with chopped coriander.
  • Serve with any kind of Biryani or Pulao.

Papaya Raita

Papaya Raita

Papaya Raita is a delicately flavored yogurt dish. This is a great way of using raw papaya in your meals. Green papaya is a powerful fruit full of essential nutrients and enzymes to promote digestive health. It has more enzymes than the ripe papaya.

Papaya Raita is a side dish that can be served along with other Indian curries like Aloo Dum, Palak Paneer and also with Methi Sweet Corn Pulao.

Ingredients for Papaya Raita

2 cups Dahi (Yogurt)
1 cup grated kaccha Papita (Raw Papaya)
1’ piece Ginger chopped fine
1 green Chilli chopped fine
1 tablespoon Coriander chopped
¼ teaspoon Chilli powder
¼ teaspoon Cumin
1 teaspoon Oil

Direction for papaya raita

  • Steam the papaya. Squeeze the water and set aside.
  • Churn the yogurt to smooth, add ginger, green chilli coriander and papaya. Mix well.
  • Heat the oil in a small pan, add cumin and switch off the heat. Let the cumin brown.
  • Add the chilli powder and pour on the yogurt immediately.
  • Serve
