Stuffed Bhindi with Paneer

Stuffed Bhindi with Paneer (ladiesfinger/okra filled with cottage cheese) is a very delicious dish made with okara and cottage cheese. Generally okaras are cooked using oil on the higher side. In this recipe I have used an Air fryer so that the Okaras are cooked without oil and are still crunchy.

Ingredients 
250 grams Bhindi (okra)
1 onion, finely chopped
1 teaspoon grated ginger garlic paste
1 tomato grated
1/2 teaspoon jeera (cumin seeds)
1/4 teaspoon haldi (turmeric powder)
½ teaspoon dhania (coriander powder)
¼ teaspoon mirch (chilli powder)
1 tablespoons oil
Salt to taste
chopped Coriander to garnish

Ingredients for paneer stuffing
1/2 cup  paneer crumbled (cottage cheese)
1 onion, finely chopped
2 cloves garlic finely chopped
2 ginger finely chopped
1/2 teaspoon dhania (coriander powder)
1/2 teaspoon amchur (dry mango powder) 
1/4 teaspoon haldi (turmeric powder)
1/4 teaspoon mirch (red chilli powder)
½ teaspoon chat masala
1 tablespoon coriander chopped
Salt to taste
1 teaspoon oil

Directions

  • Wash okra and wipe them with a kitchen towel.
  • Cut off the stems and  make a vertical cut, making sure not to separate into half.
  • Similarly do for all the okras.
  • Heat oil and add the ginger, garlic and onion and sauté for 2 minutes.
  • Add all the dry masalas along with salt and stir.
  • Add the paneer and coriander.
  • Mix and switch off the heat.
  • Now stuff all the okra one by one with the paneer mixture by gently filling through the slit.
  • Preheat an air fryer and fry the bhindis for 5 minutes.
  • Heat oil in a pan and add cumin seeds, add chopped onion, sauté until the onions are tender.
  • Add the ginger garlic paste, stir for a minute and then add grated tomatoes and cook for a couple of minutes.
  • Now add all the dry masalas, sauté for a minute.
  • Add the bhindis, stir and cover and cook till tender.
  • Now add the left over paneer mixture, stir and switch off the heat.
  • Serve the paneer stuffed bhindi  with Roti, Paratha or Rice.
