Chawal Ki Kheer-Rice Pudding

Chawal Ki Kheer is the most relished dessert of India. It can be made during any festival, function or even otherwise to be served as dessert. This simple kheer has many names like –Payasam, Payesh and Khiri.

Chawal Ki Kheer is regarded as an auspicious food, and hence served as an offering to the God/Godess in Hindu temples during rituals and ceremonies.

Ingredients for Chawal Ki Kheer

1 litre full cream Milk
20 grams small grain Rice (Jeera Rice)
100 grams Sugar
1 tablespoon Almonds sliced
1 teaspoon Pista sliced
1/2 teaspoon Elaichi powder (Cardamom)
A few strands of Saffron soaked in 1 teaspoon milk

Directions for Chawal Ki Kheer

  • Wash the rice well and add 2 to 3 drops of ghee. Mix and set aside.
  • Soak the saffron and keep aside.
  • Boil the milk in a heavy bottom Sauce-pan on low heat. Stir it frequently.
  • Add the rice after 5 minutes, stir and let it boil till the rice is cooked and the milk has been reduced by half of its original quantity.
  • Keep stirring in between to prevent burning.
  • Now add sugar and continue to boil till the kheer is thick.
  • Switch off the heat; add the nuts, saffron and cardamom.
  • Serve it hot or cold as per your liking.
