Orange Kulfi (Made with fresh juice)

Orange Kulfi is made using fresh orange juice. No colour and essence is used. The citrus flavour of orange makes this kulfi so very refreshing and delicious that it will be difficult to stop yourself from having the second one.

Kulfi is a frozen Indian dessert just like Ice cream. If there is one frozen dessert loved by every Indian, it definitely has to be kulfi. During the summers, in my hometown, the streets would be full of kulfi vendors over ice cream vendors. Kulfi is so similar to ice cream; I guess you could call it a traditional ice cream. The difference between them is that kulfi is much denser than ice cream. Kulfi is made in variety of flavors. There is keshar pista kulfi, mango kulfi, paan kulfi, strawberry kulfi, malai Kulfi, etc.

INGREDIENTS FOR ORANGE KULFI

Orange Kulfi

1 litre full cream milk
80 to 90 grams sugar
200 ml fresh orange juice (4 to 5 oranges)
1 orange peeled and segmented

DIRECTIONS FOR ORANGE KULFI

  • Keep milk to boil in a nonstick deep pan and continue to boil on low to medium heat till it is reduced to ½ in quantity. Stir occasionally.
  • Add the sugar and continue to boil till reduced to 400 ml approximately.
  • Now switch off the heat, and let the thickened milk come to room temperature.
  • In the meantime wash all the oranges.
  • Cut a small piece on the top of 2 oranges. Gently scoop out all the pulp neatly and keep for making juice.
  • Cut 2 oranges into half and scoop the pulp.
  • Now squeeze the juice out of all the pulp and strain and set aside.
  • Keep all the orange shells to be filled with kulfi.
  • If you do not want to set the kulfi in the orange shells then use  fresh juice and set in kulfi moulds.
  • Blend half the thickened milk along with orange juice in a blender.
  • Now mix this with the rest of milk and add the orange segments.
  • Pour in the Orange Shell and kulfi moulds and set in the freezer overnight. If you do not have the moulds then don’t worry. You can set them in paper cups and cover with cling wrap.
  • Serve the kulfi as it is in the orange shells or demould the kulfi by keeping the mould under the tap for a few seconds.
  • Serve immediately.

Note: Setting the kulfi mix in the Orange shell will be more flavourful compare to the kulfi mould.
