Spinach Beetroot sticks, Nimki, Namakpara, Salty & Crispy snack

Spinach Beetroot Sticks are a form of Nimki or Namak para. Nimki or Namak para is a traditional tea time savoury snack made from Plain flour. It is made and stored in homes as many of us in India prepare at least once a month. These nimkis serve as a replacement for chips and biscuits. Although they are fried, they are still healthier than chips and cookies from the stores.

Giving  a twist to the traditional nimki, I have added spinach and beet root to the flour. Spinach and beetroot add a lot of fibre, texture and colour to these Nimkis and make them healthier.

I have also tried to make the shape a little different from the traditional diamond shape. I have made them as thin, long  sticks and also twisted them a bit. Hence the name Spinach Beetroot Sticks.

Ingredients for Spinach Beetroot Sticks

For spinach sticks
1½ cup maida (all-purpose flour)
½ teaspoon pepper powder
½ teaspoon ajwain (carom seeds)
1 teaspoon salt / to taste
½ or ¾ cup spinach puree (blanched & pureed)
1½ tablespoon oil
Oil for frying

For beetroot sticks
1½ cup maida (all-purpose flour)
½ teaspoon red chilli powder
½ teaspoon kalonji (nigella seeds)
1 teaspoon salt / to taste
½ or ¾ cup beetroot puree (boiled and pureed)
1½ tablespoon oil
Oil for frying

Directions for Spinach Beetroot Sticks

  • Place all the ingredients for spinach stick in a food processor bowl, and make dough without adding any water. Keep covered and let it rest for 10 minutes.
  • Heat the oil in a broad pan on medium heat.
  • Divide the dough into 2 portions. Roll 1 part into a big circle of about 1/5 inch thickness. Cut into 1/3 inch wide stripes. Twist them a little and fry them in small batches over medium to low heat until they are crisp.
  • Drain on paper towel. Make the rest similarly.
  • Store in an airtight container when at room temperature.
  • Serve with mayonnaise dip or dip of your choice.
  • Follow exactly the same method and prepare beetroot sticks also.

Note: Make firm dough without using water. You can make the dough without a food processor also. While frying take care not to fry in very hot oil. You can sprinkle chat masala on them while hot.I have cut them in long strips but you can cut them in 3 inch long strips or in diamond shape or any shape of your choice.
