Macaroni & Coconut Salad is one of the most popular dish in our family. It is healthy, wholesome and liked by all from children to adult to seniors. This is a unique salad using coconut and elbow macaroni.
The simplicity of this salad lies with very few ingredients. This recipe does not use any fancy dressings, cream or mayonnaise, thus making it very healthy.
This recipe is special to me because I made this salad for my sister’s wedding reception consisting of 600 to 700 people, almost 25 years back. We had served it on the rocks. It was a super hit dish of the evening.

1½ cups macaroni boiled
½ cup tomatoes diced without seeds
½ cup cucumber diced without seeds
¾ cup onion diced
1 tablespoon celery chopped
½ cup scraped coconut (grated fine)
1 tablespoon sugar
½ teaspoon white pepper
1 tablespoon lemon juice
Salt to taste
Tabasco sauce optional
- In a large mixing bowl place the macaroni, add all the ingredients and toss well.
- Check the seasoning.
- Keep covered in fridge for at least 1 hour before serving.
- Serve chilled.
