Combining both Broccoli and Cranberries, and adding a twist of Apple along with other greens, I have arrived at a high energy, extremely healthy and a fulfilling bowl of a super salad, the Broccoli and Cranberry Salad.

Cranberries are among the fruits and vegetables which are rich in health-promoting antioxidants. They also protect our cells from free-radical damage. Cranberries have a high score of “antioxidant capacity”. They are also an excellent source of many important vitamins and nutrients, including vitamin C, manganese, and fiber.
This simple and quick Broccoli & Cranberry Salad Recipe is a great side dish. There are so many different flavors: the tanginess of the cranberries, crispness of the apple, crunch of the broccoli & peppers and creaminess of the dressing. Even children love this salad.

2 cups broccoli separated in small florets
1 cup red and yellow capsicum thinly sliced
1 apple cubed
2 tablespoon dried cranberries
For the dressing
2 tablespoon garlic mayonnaise
1 teaspoon lemon juice
1 teaspoon honey
Salt and pepper to taste
- In a bowl, combine all the ingredients for the dressing. Keep aside.
- Blanch broccoli florets in boiling water for two to three minutes. Rinse in cold water and strain.
- Transfer to a medium bowl.
- To the broccoli, add peppers, dried cranberries and apple. Toss well.
- Now fold the dressing into the salad.
- Serve immediately.
Note: You can substitute the Cranberries with raisins.
